Why was the plastic or glass used to separate the fillings from the magnets in the experiments?

Magnetic lines of force will pass right thru glass or plastic and have no effect on them. When you put the horseshoe magnet in the mix, the magnet only attracts other ferromagnetic materials like iron filings. If there is enough iron filings in the mix, the filings could bridge the gap between the poles
